Zoodles & Shrimp Recipe Using joyloop

Happy Monday loves! Today I’m sharing a recipe using joyloop zucchini spirals. If you’ve been following me on Snap (Yes- I finally joined!) you’ve seen a sneak preview of this deliciousness. Call me lazy, but I love that these veggie noodles are ready to eat with no spiralizer/ labor necessary. 🙂

There are SO many different recipes that you can throw together using these noodles. I came up with this one the other night while having a random craving for shrimp.

Ill call this one: Zoodles & Shrimp

Ingredients:

  • joyloop zucchini spirals (you can order from the website and they will deliver! See discount code below. Also available at Andronicos, Rainbow Grocery & Falletti Foods in San Francisco)
  • 4oz shrimp
  • 1 small lemon, juiced
  • 1/2 tsp garlic powder
  • pinch of salt & pepper
  • 1 tsp olive oil
  • cherry tomatoes
  • Parmesan cheese

Recipe:

Cook the shrimp in a pan with lemon and a small amount of olive oil. Set aside. Cook the zucchini spirals with olive oil, lemon and seasonings. Cook for about 8 minutes then add the tomatoes to the mixture. Add shrimp to the zucchini mixture, top with parmesan cheese and serve.

This one’s a keeper! Super healthy, protein packed and easy.
